HEALTHIEST CAESAR SALAD RECIPE

Okay friends, we have done it! This caesar salad recipe has been a staple in my kitchen for years, and I am so excited to share it with you. From the dressing, to the toppings, the nut-cheese, and presentation, we have made this gluten-free, low carb & vegan caesar salad everything we hoped for! It is no secret that salad's are only as good as the produce. Luckily, here in Canada, summer time is the best time to stock up on local produce, or pull fresh veggies from your garden that are full of flavour and crunch.

Before you get to chopping your fresh & flavourful veggies, you need to make your dressing and nut cheese. You have seen this nut-cheese recipe before in our ULTIMATE Vegan Flatbread blog post. Just a few simple ingredients, this nut cheese can be used on flatbreads, pizzas, stir-fry's, and more!

Next up, the dressing! All you need is a high speed blender and a few ingredients that you likely have in your pantry! As always, if one of our ingredients isn't your favourite, adjust it to fit your pallet! You can easily reduce the garlic or olive oil, capers, or add any of your favourite flavours. Our homemade Vegan Caesar Salad dressing (also GF and Keto) is:

And the best part is, this recipe is easy as can be. If you don't soak your cashews in hot water, just throw them in the fridge the night before and let them soak overnight. Adjust as you need - personally I LOVE spicy foods, so I like to add a pinch of cayenne to add a little heat.


The process is easy - lettuce, homemade caesar dressing, more of your favourite veggies, Thornbury Bakery Keto Croutons, homemade nut cheese & freshly ground pepper. Enjoy!!
